Warm Grilled Chicken & Vegetable Salad

Serves 4

Delicious light salad with warm grilled chicken breast strips and mixed green vegetables. One bowl of happiness.

INGREDIENTS

1 ½ lb chicken breast strips
kosher Salt and freshly ground black pepper
chicken seasoning
chili flakes
vegetable kit
(for ex. carrots, green pepper, mushrooms, brocoli, red onion)
extra virgin olive oil
1 lb of Organic Greens
(I used power greens like baby chard, baby spinach, baby kale)
tomatoes
4 oz shaved Parmesan
truffle oil (if you like)

DIRECTIONS

Marinate chicken strips in olive oil with salt, pepper and some chicken seasonings for about half an hour.

Place vegetables in a sheet of aluminium foil, drizzle with oil and season with salt and pepper and some chili flakes. Gentle close foil pack.

Place chicken strips and foil pack on grill coated with cooking spray. Cook chicken on all sides until juices run clear and no pink remains. About 7-10 minutes.

Place salad greens, chicken and veggies on a plate. Add some tomatoes, shaved parmesan and salt and pepper.

Serve your favorite dressing to the side, or just sprinkle some Truffle Oil (my favorite).
