Swiss Carbonara with Asparagus

Serves 4

Delicious creamy pasta with asparagus! 


1 package of Penne Pasta

500 gr White Asparagus

3 Spring Onions

100 gr bacon

1 tbsp butter

2-4 tbsp of creme fraiche

1-2 tbsp of cooking water

Small glass of white wine

Freshly grated sbrinz or parmegiano 

Freshly chopped parsley 

Salt, pepper and chili flakes


  1. Bring a large pot of water to boil and cook the pasta according to the package directions.
  2. Heat butter in a large pan over medium heat. When hot add the onions and saute until the onions turns translucent. Don’t brown. Add the bacon and creme fraiche. Add the wine and season with salt, pepper and chili flakes to taste. 
  3. Peel the white asparagus and cook in salty water for about 4-5 minutes. Cut them in smaller pieces.
  4. Add the pasta to the sauce and stir together quickly to coat the pasta. If needed add some of the cooking water to make the sauce nice and shiny. Add the cooked asparagus and some freshy cut parsley. 

Serve immediatly with freshly grated Sbrinz or Parmeggiano. Buon Appetito !
