Meatless Carbonara

Meatless Carbonara
Serves 4-6

 Delicious bowl of comfort!



16 ounce of dried spaghetti
1 tbsp of olive oil
1 large yellow onion
2 gloves of garlic
½ lime or lemon, zested and juiced
½ cup sun dried tomatoes, cut into pieces
2 tbsp of soya sauce
2 tbsp of creme fraiche
1 tbsp of cooking cream
Freshly grated parmeggiano
Freshly chopped parsley and basil
Salt, pepper, dried chili flakes


  1. Bring a large pot of water to boil and cook the pasta according to the package directions.
  2. Mix the sun dried tomatoes with the soy sauce and leave to absorb flavour.
  3. Heat olive oil in a large pan over medium heat. When hot add the onions and the garlic gloves and saute until the onions turns translucent. Don’t brown. Add creme fraiche and cooking creme. Add a little bit of lime or lemon juice and season with salt, pepper and chili flakes to taste.
  4. Remove the garlic gloves from the sauce, add the sun dried tomatoes, freshly chopped basil and parsley and add the spaghetti. Stir together quickly to coat the pasta. If needed add some of the cooking water to make the sauce nice and shiny.

Serve immediatly with freshly grated parmeggiano. Buon Appetito !
