Italian Tuna Salad

Italian Tuna Salad

Ingredients
– 2 tablespoons of lemon juice
– 1 tablespoon of lime juice
– 1 teaspoon of Dijon Mustard
– 1⁄4 cup of olive oil (extra virgin) Salt
– One can of cannoli beans (drained & rinsed)
– One glass jar of tuna on oil (drained & rinsed)
– 2 cups of arugula
– 1 small radichio (or red cabbage) cut into pieces
– 2 small beligian endives cuti into pieces
– 1 small fennel cut into pieces
– 1⁄2 cup of fresh parsley (italian parsley)

 

Whisk together the lemon and lime juice, capers and Dijon mustard in a large bowl.
While continuing to whisk, drizzle in the olive oil.
Whisk in 1/4 teaspoon salt.
Add the beans to the dressing.
Add the tuna (shred the tuna before tossing in).
Top the tuna mixture with the arugula, radicchio, endive, fennel, parsley and 1/2 teaspoon salt.

Mix the salad together gently.
