Delicious quick and easy healthy quiche.
INGREDIENTS
1 Vegan Pie Dough (round)
400 gram Bio + Vegan Tofu (2 pieces of 200 gram)
1 small onion
1 red pepper
Fresh Spinach
Broccoli
1-2 teaspoons of tumeric
1-2 teaspoons of garlic powder
Chili flakes
Salt, peper
Dairyfree cooking creme (for ex. Oatly)
Vegan cheese
DIRECTIONS
- Preheat the oven to 190 C.
- Heat oil in a large skillet over medium heat. Add onion and pepper and saute for about 3-5 minutes until softened and lightly brown. Add spinach and cook until wilted (I always cut my spinach into a smaller bunch).
Sprinkle with salt, pepper and some chili flakes. Remove from heat and set aside. - Add the broccoli (I always pre steam the broccoli for about 3-4 min).
- Break up the tofu and add the seasonings, 1-2 tablespoons of cookingcream (more if needed). It will be very thick, but you can add more cooking cream. Just so that you can get it moving. Add some vegan cheese.
- Bake the pie crust for about 5 min and then take out and add the filling. Bake for another 30-40 min. Let cool for about 10 min before serving.
